Casa Román opened its doors in 1934, when Plaza de los Venerables was still a quiet corner of the Jewish quarter. Four generations later, the chalkboard menu still changes by hand every day, the jamón hangs above the bar as it always has, and the cola de toro still cooks for hours, never less.

Some things we have kept exactly as they were. Everything else, we have perfected.
